Avocado Pasta

This is such a yummy fresh clean tasting meal thats both healthy AND super easy!

  • 2 Avocados
  • Garlic Cloves
  • Basil Leaves
  • Ground Pepper
  • Olive Oil
  • 1 Lemon
  • Sea Salt
  • Bow-tie Pasta
  • Cherry Tomatoes
  • Mozzarella cheese


Boil Pasta of your choice. (I chose bowtie)

Separately in a food processor add:

2 ripe avocados,

1 table spoon of Lemon Juice

2 large cloves of Garlic

3/4 cup of fresh basil 

2 teaspoons of sea salt

1 teaspoon of black ground  pepper

1/4 cup of extra virgin olive oil

Now Blend until creamy & smooth.

Once pasta is cooked to taste & COOLED, strain and in a large bowl & mix the blended avocado mixture and the pasta.

add white or yellow corn and halved cherry tomatoes

optional: a sprinkle of shredded mozzarella cheese.

* LEFTOVERS:  To help avoid the avocado pasta from browning, sprinkle / mix real lemon juice into the leftovers and store in a air tight container.  Consume by 3 day mark. 


Fresh Strawberry Summer Salad

Healthy dinner. Pretty easy and healthy, Its a great meal on a hot day.

  • 2 thawed Chicken breast
  • Fresh Strawberries
  • 10oz. Spring Mix greens
  • Regular or candied walnuts
  • Dried yellow raisins 
  • Raspberry Vinaigrette dressing
  • Fetta Cheese crumbles


  1. Bake lightly salted chicken breast for approx 22mins at 400 degrees.

  2. Slice up washed strawberries & remove stem

  3. Place cooled chicken, sliced strawberries, mixed greens, walnuts, dried raisins, 2 teaspoons of raspberry vinegarette dressing, and fetta cheese in large bowl.
