Juicy Pork Chops

Undoubtably my favorite thing to make when I am craving something salty. Being Latina, pork (chuleta) is a big part of our food culture. HACK: By using microwavable mashed potatoes you cut down dinner time in half. This dish is simple and taste so good.

  • Bone in Pork chops
  • 3 tbsp Fresh chopped chives (for garnish)
  • Apricot preserve 
  • Bob Evans (microwavable mashed potatoes)
  • Adobo
  • pepper
  • butter
  • olive oil


  1. PRE-HEAT oven to 375
  2. In a medium pan add 1 tsp butter, 1 tsp olive oil on high heat.
  3. Season both sides of the pork chop with adobo and pepper (to taste) 
  4. Sear each side of the pork chop in the pan for 2 mins each. 
  5. In a deep baking pan spray bottom with PAM, and add a tsp of butter on top of each chop and lay them flat in the pan.
  6. Bake pork chops for 12 mins.
  7. Serve pork chops on plate, lightly season pork chop again with adobo and add a table spoon of apricot preserve and garnish with chives. 

Chicken Salad Sandwich

I am not much of a tuna or chicken salad girl, but the dish was requested by a house guest and as a good hostess I did research on what makes up a good chicken salad sandwich. I found that most recipes call for mayo, chicken, dill, and grapes. I decided to combine 2 different recipes and the results were delish.


Enjoy this as a lunch dish or even just a snack.

  • 3 cups Grilled Chicken optional: (foster farms pre cooked chicken)
  • 2 cups Celery
  • 3 cups of Red grapes 
  • 2 tbsp Fresh dill
  • 2 tbsp Dried parsley
  • 1 cup Green Apple
  • 2 tbsp Fresh chopped chives 
  • Juice of 1 lemon
  • 12 fl oz cup olive oil mayo
  • Salt
  • Pepper 
  • Sliced Almonds
  • 6 croissant rolls 


  1. In a medium bowl combine, 3 cups of shredded up chicken , 3 cups of halved red grapes, 2 cups of chopped celery, 1 cup diced green apple.
  2. In a separate bowl, mix up the mayo, fresh dill, salt, pepper, chives & the juice of 1 whole lemon.
  3. Put everything together in 1 large bowl and mix it all up. 
  4. optional : Cover and let sit in refrigerator for 4-6 hours. 
  5. Slice in half croissant roll and put mixer in the sandwich.

Serve and enjoy! 


Sweet Miso Salmon

Made this for Dinner Tonight and it came out so amazing I had to post it right away! It takes a little time but the longer you wait, the better it taste.

Time: 2 hours


  • Salmon Filet (No skin)
  • 3 tsp Minced garlic
  • 1 tsp ground ginger
  • 6 tbsp Honey
  • Miso Paste
  • 5 tbsp Soy Sauce
  • 3 tbsp Fresh chopped chives (for garnish)
  • Uncle Ben - Jasmine Rice


  1. In a mixing bowl, whisk : garlic, ginger, honey, miso paste, & soy sauce. 
  2. Pour the marinade in a Large Ziplock with the salmon filet. Allow it to marinade for as many hours as you can. Overnight would be best. 
  3. Use a frying pan on HIGH to heat 2 tsp of peanut oil, to lightly sear both sides of each filet. depending on its thickness it could be anywhere from 1-2 mins. Set the marinade aside.
  4. Line a deep baking pan with aluminum and spray lightly with Pam. 
  5. Carefully Transfer the salmon filets from the frying pan to the aluminum lined baking  pan.
  6. Bake at 350 for 7 mins, remove, pour 2 tbsp of the marinade over the filets, bake again for 8 mins or until cooked to your liking.
  7. Cook Jasmine Rice Per the rice instructions on box. Plate a serving spoon worth of rice and place salmon on top of bed of rice. drizzle marinade over the salmon and rice.
  8. Garnish with the fresh chopped chives.

Lemon Parmesan Shrimp Pasta

This is a staple dish everyone should make. Very Easy and tasty. Doesn't require skill or many ingredients.

Time: 40 mins


  • 1 ¼lbs of peeled / deveined shrimp
  • 12oz angel hair pasta
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • salt and pepper
  • 3 cloves worth of minced garlic
  • 1 ½ tsp lemon zest
  • 3 tbsp fresh lemon juice
  • 3 tbsp chopped fresh basil
  • 3 tbsp chopped fresh parsley
  • ½ cup finely shredded parmesan


  1. Cook pasta in salted water (aprrox. 5 mins). Reserve ½ cup of pasta water before draining. 
  2. In a large Pan, heat up olive oil and butter over medium-high heat. 
  3. Add shrimp and season with salt and pepper. (i recommend removing the tails before cooking)
  4. Saute for 2 minutes, add minced garlic and continue to sauté for an additional 2 minutes until the shrimp is fully cooked. 
  5. Toss the drained pasta into the mixture of shrimp and the ½ of the reserved pasta water, add the lemon zest and juice.
  6. Add more pasta water little by little. and toss in the parsley and basil. 
  7. Serve in shallow bowls and garnish with parmesan cheese, and a pinch more of parsley and basil. 

And thats it! enjoy this restaurant quality dish and impress your family effortlessly.








My Famous Mulled Wine

This is a hot drink that is perfect for a wine drinker and a holiday party. But I must warn you, this drink is magical. Its like someone put christmas in a cup. It will warm your whole body and make you want more.  Thus i must say: Don't Drink and Drive.

Very Easy to do just requires a medium crock pot and a few ingredients. Kind of time consuming but worth it. ** Tip: Due to its hot temp, drink it from a mug. 

(Feel free to switch brands, this is just the combo I found taste best.)

Time: 2-3 hours


  • 750 ml Joel Gott Zinfandel 
  • 3 cups of Simply Apple Juice
  • 1 cup of organic sugar 
  • 1/2 cup of E&J Brandy 
  • 3 cups of whole cranberries
  • 6 cinnamon sticks 
  • 2 large Oranges
  • Whole cloves
  • Cinnamon powder


Start by pouring the whole bottle of wine into the cooker.  Turn it on Low heat.

Add in the apple juice, sugar, cranberries and a tablespoon of cinnamon.

Stick whole cloves into a clean orange peel, all over. Then place the clove studded orange into the wine.

Cook this on LOW for 2hrs. Stir the liquid every 30 mins.

Once you have cooked the mixture for 2hrs, Add the brandy and squeeze the clove studded orange into the cooker.  Stir it all together and put it back on the cooker.

Cook for an additional 30mins-1hr.

Prepare your garnishes. 

Slice the 2nd orange into very thin circles. 

Optional: On a long toothpick add a few pieces of whole uncooked cranberries. Grab a Mug, put a cinnamon stick in, along with the cranberry skewer. 

Now you are ready to enjoy your magical mulled wine. 

Take a ladle and serve the mixture into the garnished mug.

Sprinkle some ground cinnamon on the top.

* LEFTOVERS: Much Like normal wine, you want to keep air exposure to the minimum. Store in a wine bottle and re-cork it, a mason jar with screw on lid etc. You can also purchase a wine vaccum for under $20 on amazon. A good one with good reviews is : Vacu Vin.  






Avocado Pasta

This is such a yummy fresh clean tasting meal thats both healthy AND super easy!

  • 2 Avocados
  • Garlic Cloves
  • Basil Leaves
  • Ground Pepper
  • Olive Oil
  • 1 Lemon
  • Sea Salt
  • Bow-tie Pasta
  • Cherry Tomatoes
  • Mozzarella cheese


Boil Pasta of your choice. (I chose bowtie)

Separately in a food processor add:

2 ripe avocados,

1 table spoon of Lemon Juice

2 large cloves of Garlic

3/4 cup of fresh basil 

2 teaspoons of sea salt

1 teaspoon of black ground  pepper

1/4 cup of extra virgin olive oil

Now Blend until creamy & smooth.

Once pasta is cooked to taste & COOLED, strain and in a large bowl & mix the blended avocado mixture and the pasta.

add white or yellow corn and halved cherry tomatoes

optional: a sprinkle of shredded mozzarella cheese.

* LEFTOVERS:  To help avoid the avocado pasta from browning, sprinkle / mix real lemon juice into the leftovers and store in a air tight container.  Consume by 3 day mark. 


Sweet Hawaiian Mini Sandwiches

Cheat Meal

Time: Approx 20 mins


In an 8x8 square tin pan, place a piece of parchment paper big enough to cover the whole pan and a little extra on the sides.

Slice 9 hawaiian rolls cut horizontally (into sandwich buns) and place the bottom halves into the pan over the paper.

Spread mayo over the top of the bottom 9 pieces of bread thats in the pan.

Place a layer of Turkey or Brown sugar Ham slices over the mayo, and then a layer of swiss cheese over the meat. Add your 9 hawaiian sandwich roll tops . Your sandwich is almost complete. 

In a 1 cup measuring tool add 6 table spoons of melted butter, 1/4 cup of brown sugar, & 2 tablespoons of honey Dijon. Now mix

Pour over the sandwiches and glaze the tops of the bread. 

Heat for 13-15mins at 400 in the oven. 

Use a pizza slicer to divide the 9 mini sandwiches & enjoy!

* LEFTOVERS: Place Left over mini sandwiches in aluminum and in fridge or ziplock in freezer. Consume by 5 day mark. 


Balsamic Chicken & Veggies

Healthy dinner

  • Olive Oil
  • 8oz. Baby Mushrooms
  • 10oz. Green Beans 
  • Chicken Strips
  • Salt & pepper
  • 1/4 cup Italian dressing
  • 3 tablespoons of Honey 
  • 3 tablespoons of balsamic Vinegar
  • minced garlic
  • Cherry tomatoes 


In a large pan pour 2 table spoons of olive oil

Add approx 8oz Mushrooms & 10oz fresh cut green beans.

Stir often and cook covered for 15mins

Remove mushrooms and green beans from pan and put on hold in a serving bowl.

Place 6 to 8 pieces of chicken strips or tenderloins to cook, season with salt & pepper to taste. 

Flip and season again.

Once chicken is throughly cooked, add and mix with the veggies in serving bowl. 

On Medium Low heat Place 1/4 a cup of italian dressing in pan, 3 tablespoons of pure honey, 3 tablespoons of balsamic vinegar, 1 teaspoon minced garlic, reduce and let simmer until you create a thick sauce. 

Place the chicken and veggies back to pan, stir with sauce add Halved cherry tomatoes and sprinkle salt.  

Cook the mixture covered for 5mins.

Serve and Enjoy





Easy Tortellini

This is a favorite at my dinner parties and its so easy to make.

Time: 20 mins


  • pre-made tortellini
  • 1 can of black beans
  • 1 can of unsalted sweet corn
  • salt & pepper
  • 10oz. Spinach
  • shredded mozzarella cheese
  • pre-made pesto


Boil premade tortellini until its soft and edible.

Drain tortellini, put in a large bowl and add a large serving spoon worth of pesto.

Add 1 can of drained black beans

Add 1 can of sweet corn 

Season with sea salt & pepper

Carefully Mix it all up, trying not to break the tortellini.

optional: serve over a bed of spinach & sprinkle a bit of mozzarella cheese on top 


Shrimp & Spinach Salad the #SSS

This is one of my favorites right now. I get tired of eating chicken & fish all the time so I recently decided to try adding shrimp to my diet. It turned out amazing and I just had to share it with you.

  • Minced Garlic
  • Jumbo or mini shrimp (pre-cooked & frozen)
  • Salt & Pepper
  • 10oz. Baby Spinach
  • Cherry Tomatoes
  • Feta Cheese crumbles
  • 1 lemon
  • 1 lime
  • Olive Oil
  • Balsamic Vinaigrette 


Lightly sauté a teaspoon of minced garlic on medium frying pan. 

On Medium Heat add thawed cooked shrimp to pan.

Season shrimp lightly with salt and pepper to taste.  (optional cayenne pepper)

Cook shrimp until they are lightly golden.

Remove Shrimp from stove to allow to cool.

Fill your bowl with spinach. 

Add some halfed cherry tomatoes (avocado slices optional but recommended)

Add shrimp to bowl & sprinkle Feta Cheese over the contents.

Squeeze some fresh lemon and lime juice 

Drizzle some extra virgin olive oil (teaspoon of balsamic vinaigrette optional)
